Who doesn't love a big ole bakery-style cookie?! Ever since I saw The Palatable Life's Instagram Reel on her famous Gilmore Girls Coffee Cake Cookies, I figured I had to make them, with a couple tweaks for my plant-based friends, of course!

These melt-in-your-mouth cinnamon and brown sugar cookies are quite the delight! Pair it with your favourite cup of Joe for a perfect afternoon treat.
