How do you like them apples?? Preferably as apple turnovers, please!
How to Assemble the Apple Turnovers
Step 1: Roll out your puff pastry into a large square, then cut into 12 smaller squares (preferably 5 inches by 5 inches). If you run into the issue that where you have more of a rectangle than a square - no worries - just fold over on of the sides to make a square (see images below).

Step 2: Prep your working space! In the image you can see I had the saucepan with the cooled apples to one side, and then my baking sheet lined with parchment paper and a bowl of warm water and fork ready to assemble the apple turnovers.

Step 3: Dip your fingers into the warm water and then run them along the edges of your puff pastry. This will help to "seal" your apple turnover.

Step 4: Add one to two tablespoons of the apple filling to the centre of the puff pastry.

Step 5: Take one edge of the puff pastry and fold it over the apple filling.

Step 6: Seal the puff pastry with a fork.

Step 7: With a sharp knife, cut slits into the top of the apple turnovers. Brush warm water on top of the apple turnovers, then sprinkle raw sugar.

Step 8: Bake those bad boys for 15-20 minutes until they are golden brown!
